Scone-Based Pizza

Ingredients:

  • 4 tablespoons unsalted butter
  • 1 cup all-purpose flour, plus more for rolling out dough
  • Pinch of salt
  • 1 cup water
  • 1 1/2 cups homemade or prepared tomato sauce
  • Desired toppings, such as sliced vegetables, fresh herbs and grated cheese

Directions:

  1. Preheat oven to 425 degrees F. Place the butter in a large mixing bowl. Sift the flour into the bowl and add the salt. Using a pastry blender, two knives or your fingertips, cut the butter into the flour until the mixture resembles coarse meals.
  2. Make a well in the center of the flour mixture and slowly add the water. The water can be combined with 2 to 3 tablespoons milk if desired. Slowly stir the liquid into the dry ingredients, adding water in small amounts at a time until a dough starts to form. The dough should be malleable but not sticky. Roll the dough into a ball and knead with your hands before transferring dough to a lightly floured surface.
  3. Roll out the dough to approximately 1/2 inch thick. The pizza can be shaped into any desired shape or shaped cutters could be used to form smaller individual pizzas. Lightly coat a pizza pan with nonstick cooking spray.
  4. Spread a layer of tomato sauce over the dough base with a knife.
  5. Add desired toppings. For a healthier version of this dish, add vegetables as toppings and limit the amount of cheese on top. Herbs such as basil and oregano enhance the flavor of the pizza.
  6. Bake pizza for 15 to 18 minutes. Cooking time will vary depending on the types of toppings used. The base should be a golden color when cooked.
  7. Transfer pizza to a wire rack to cool slightly before serving.
